Ingredients
120 g crushed vanilla cookies
40 g grated coconut
30 g unsalted butter
For the Cheesecake filling:
2 packages of cream cheese
130 g sugar
30 g plain flour
1 tsp vanilla extract
2 eggs, plus 1 yolk
1/2 cup coconut milk
2 tbsp coconut sky liqueur
3 tbsp buttermilk
Decorations:
1 can drained and chopped pineapple
5 to 6 tbsp brown sugar
3 tbsp of Coco Sky liqueur
Whipped cream
1/2 cup of grated coconut
Methods
- Mix the crushed vanilla cookies, grated
- coconut and melted butter. Place the mixture into a
- inch spring form pan. Using your hands press the
- mixture evenly onto the bottom.
- On a large bowl add all the ingredients of the
- filling and mix until well combined. Place the mixture
- over the cookie crust. Bake for 45 minutes.
- Remove from oven and allow it to cool
- completely at room temperature.
- Meanwhile, in a small saucepan cook at
- medium-heat for 7 minutes the chopped pineapple
- and brown sugar. Remove from heat, add Coco Sky
- liqueur. Let the preparation cool and place it on top of
- the filling.
- Decorate with whipped cream and grated Coconut.
