Ingredients

  • 120 g crushed vanilla cookies

  • 40 g grated coconut

  • 30 g unsalted butter

  • For the Cheesecake filling:

  • 2 packages of cream cheese

  • 130 g sugar

  • 30 g plain flour

  • 1 tsp vanilla extract

  • 2 eggs, plus 1 yolk

  • 1/2 cup coconut milk

  • 2 tbsp coconut sky liqueur

  • 3 tbsp buttermilk

  • Decorations:

  • 1 can drained and chopped pineapple

  • 5 to 6 tbsp brown sugar

  • 3 tbsp of Coco Sky liqueur

  • Whipped cream

  • 1/2 cup of grated coconut

Methods

  • Mix the crushed vanilla cookies, grated
  • coconut and melted butter. Place the mixture into a
  • inch spring form pan. Using your hands press the
  • mixture evenly onto the bottom.
  • On a large bowl add all the ingredients of the
  • filling and mix until well combined. Place the mixture
  • over the cookie crust. Bake for 45 minutes.
  • Remove from oven and allow it to cool
  • completely at room temperature.
  • Meanwhile, in a small saucepan cook at
  • medium-heat for 7 minutes the chopped pineapple
  • and brown sugar. Remove from heat, add Coco Sky
  • liqueur. Let the preparation cool and place it on top of
  • the filling.
  • Decorate with whipped cream and grated Coconut.
